Fickle Pickles Sloppy Joes - Cajun or Buffalo Chicken Style
Fickle Pickles Sloppy Joes are made with ground chicken, and you have two different spicy style options to choose from. Try them both and let us know which is your favorite! Pairs well with Fickle Pickle Cole Slaw!

INGREDIENTS:
- 1 Lb. Ground Chicken Breast
- 1/2 C. Red Bell Pepper, diced
- 1/2 C. Green Bell Pepper, diced
- 1 Small yellow onion, diced
- 2 Tbsp. Tomato Paste
- 3 Tbsp. Fickle Pickles juice
- 1/4 C. Buffalo hot wing sauce*
- 2 Tsp Worcestershire Sauce
- 1 Tsp Coarse Ground Black Pepper
- 2 Tsp Cajun Seasoning
- 1 Tsp Smoked Paprika
- Salt to taste
- Olive oil
- Mayo or mustard
- Ranch dressing*
- Crisp lettuce leaves
- Cheddar or Pepperjack cheese, shredded or sliced
- Fickle Pickles
- Burger or slider buns
DIRECTIONS:
- Add 1 tbsp olive oil to a skillet and heat over medium-high.
- Add all veggies and cook for 3-4 minutes until soft.
- Place ground chicken in skillet, breaking up while cooking for 5 minutes.
- Next add all dry seasonings and liquid ingredients and mix well with chicken and veggies.
- Reduce heat to low and simmer for 10-15 min (no lid on skillet) until chicken is thoroughly cooked and juice thickens.
- Add 1-2 tablespoon of water if needed.
- Toast buns and spread with mayo or mustard.
- Add a heaping spoonful of chicken mixture and top with Fickle Pickles, cheese and lettuce.
For keto or low carb diets, make lettuce wraps. Pairs well with Fickle Pickle Cole Slaw!
*To make this recipe “Buffalo Style” simply omit the bell peppers, tomato paste, Cajun seasoning, paprika and mayo/mustard. Prepare as described and add 1/4 C Buffalo wing sauce as the chicken is cooking and juice thickens. Smear the buns with Ranch dressing before adding meat and toppings.
